pumpkin pie pudding

tomorrow is thanksgiving and if you are still in need of a dessert then try this simple one. it’s as easy as pie…pumpkin pie that is.

pumpkin pie pudding

ingredients
pudding:

  • 1/2 cup light brown sugar
  • 1/4 tsp salt
  • 1/4 cup cornstarch
  • 2 cups whole milk
  • 1 tsp vanilla
  • 1 egg
  • 3/4 cup pumpkin puree
  • 1/2 tsp pumpkin pie spice

whipped cream:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla

caramel sauce, optional

directions
in a medium saucepan over medium heat, whisk together sugar, cornstarch, salt, milk, and egg.
stir constantly until large bubbles form in the center. then reduce heat to low and cook for an additional minute. remove from heat.

pour mixture through a mesh strainer into a medium bowl. use a spoon to press mixture through strainer.
whisk in pumpkin puree and pumpkin pie spice.
divide among small serving dishes and chill.
to make whipped cream, combine heavy cream, powdered sugar and vanilla in a medium bowl. beat until stiff peaks form.
top off chilled pudding with whipped cream and caramel sauce.
serve after thanksgiving dinner and enjoy!
