i love avocados. and i love pesto. so when i saw this recipe on pinterest my mouth started to water immediately. and this recipe was perfect because i could use the herbs and spinach i have been growing in my living salad bowl. it contains green leaf lettuce, red leaf lettuce, spinach, parsley, and chives.
so i was able to use the parsley, chives, and spinach for this recipe.
pesto spinach avocado grilled cheese
ingredients for homemade pesto
- 1 clove garlic
- ½ small shallot, chopped
- 1 teaspoon lemon juice
- handful chopped fresh parsley
- 1 tablespoon chopped chives
- ¼ cup olive oil
- salt and pepper to taste
directions for homemade pesto
in a good processor, pulse garlic and shallot until chopped.
with the food processor running, add lemon juice, parsley, and chives.
then very slowly drizzle in olive oil until everything is the consistency of a pesto. (add olive oil depending on how big the “handful” of herbs you added.)
season with salt and pepper.
ingredients for sandwich
- 2 slices of whole grain bread
- 3 tablespoons of pesto
- 2 slices of mozzarella cheese
- 3-4 fresh spinach leaves
- ¼ avocado, sliced
- 2 tablespoons goat cheese, crumbled
- 1 tablespoon olive oil
directions for sandwich
spread about 1 1/2 tablespoons of pesto onto each slice of bread.
to one slice of bread, add a slice of mozzarella cheese, sliced avocado, and crumbled goat cheese.
top the second slice of bread with a slice of mozzarella cheese and spinach.
heat olive oil in a pan over medium low heat.
gently press the two pieces of bread together and place in pan. cook until bread is golden brown.
gently press down on the sandwich, flip, and cook until second side is golden brown.
