pumpkin waffles


since it’s getting closer to thanksgiving i have been all about anything pumpkin. i’ve been pinning pumpkin drinks, pumpkin muffins, pumpkin bread…pumpkin, pumpkin, pumpkin! i recently pinned these pumpkin waffles but thought i don’t have a waffle iron. so i ran out to buy a waffle iron, made them, and ate them for dinner all because i couldn’t wait until morning!

pumpkin waffles

  • 2 cups all-pupose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon or pumpkin pie spice (i used a little more since i love this spice)
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups milk
  • 1 cup canned 100% pure pumpkin
  • 1 egg yolk
  • 3 egg whites
  • 4 tablespoons melted cooled butter
  • 2 tablespoons apple cider vinegar

mix together all dry ingredients in a large mixing bowl. set aside.
mix together milk, pumpkin, butter, egg yolk and vinegar in a small bowl. set aside.
in a bowl small bowl, whisk egg whites until peaks form.
add pumpkin mixture to dry ingredients and stir to combine.
gently fold in egg whites.

place a large spoon full of batter in the middle of each waffle of the waffle iron. the batter will evenly spread out to the edges so only place in the middle of the waffle iron. (or you will have a big mess!)

cook until golden brown and slightly crispy.

serve with butter and hot syrup.
