i’ve had a rough few days and needed some comfort food. and it can’t get any more comforting than mac & cheese. but I didn’t want to make an entire dish of it because that’s just asking for trouble. i would eat the whole thing and feel worse than i did before i needed the comfort food. so this recipe was perfect. single serving and mirowaveable!
homemade microwave mac & cheese
- 1/3 cup whole grain elbow macaroni
- 2/3 cup water
- 1/3 cup cheddar-jack shredded cheese (or more if you love cheese!)
- 2 teaspoons milk
- salt and pepper
in a microwave safe big soup mug or bowl add the whole grain elbow macaroni.
add 2/3 cup water to the macaroni. microwave for 6 minutes, stirring at 4 minutes, 2 minutes, and 1 minute. (microwave cooking time may vary depending on your microwave.)
the pasta will have a small amount of water left in it. do not drain it.
add the shredded cheddar-jack cheese.
return to the microwave for 30 to 45 seconds to melt the cheese. stir.
add 2 teaspoons of milk and stir well.
eat immediately to get that warm comforting feeling you need. and make a second serving if you have to. enjoy!
