A few weekends ago I had my family over for lunch. I wanted to cook something warm and hearty since it had been snowing for days. I decided on a meat and potato casserole…You can’t get any more hearty than that! I also made a little something special for my nephew because he can be a picky eater at times. I made Cheesy Potato and Sausage Casserole for the adults and Corndog Muffins for the little guy…which I think the adults enjoyed more than he did!
Cheesy Potato and Sausage Casserole
- 3 cups potatoes, peeled and cubed
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups milk
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ lb Velveeta cheese
- ½ cup sharp cheddar cheese, shredded
- 1 lb skinless smoked sausage
Boil potatoes until tender.
Cut sausage into ½ inch half moon pieces.
Cook sausage in a frying pan for about 15 minutes or until slightly brown.
Put cooked potatoes in 2 quart casserole dish. Add cooked sausage and give it a gentle toss.
Mix flour, butter, milk, salt, pepper, and Velveeta cheese in a saucepan over medium heat. Use a whisk and stir constantly until smooth.
Pour cheese sauce over potatoes and meat.
Sprinkle sharp cheddar cheese on top.
Bake in preheated 350°F oven for 35-45 minutes or until golden brown on top.
- 4 hot dogs
- Cornbread mix
- 1/3 cup milk
- 1 egg
Cut hot dogs into bite size pieces.
Mix corn bread mix, milk, and egg.
Add hot dog pieces to corn bread mix.
In a greased muffin pan, add one large spoonful of mix to each cup.
Bake at 350 degrees for 15-20 minutes or until golden brown.
