This past weekend I went tailgating for the Indianapolis Colts vs. Miami Dolphins game. I had to bring a dip so I stuck with the traditional football tailgating theme and brought Beer Cheese Spread. Tailgating + Football = Beer. I found this recipe on Southern Living. Everyone loved this spread…especially the guys since it had a definite beer taste to it. I served it with Peppridge Farm Pretzel Thins…because pretzels always go with beer! Not only was my spread a winner but the Colts were too! They beat the Dolphins 23-20!
Beer Cheese Spread
1 (2-lb.) block sharp Cheddar cheese
1 small onion, minced
2 garlic cloves, minced
1/2 teaspoon hot sauce
1/4 teaspoon ground red pepper
1 (12-oz.) bottle amber beer, room temperature
Salt and pepper to taste
Shred cheese into a medium size bowel.
Add onion, garlic, hot sauce, and red pepper to shredded cheese.
Beat with an electric mixer until blended.
Gradually add beer, beating until blended after each addition.
Beat at medium-high speed one minute or until creamy.
Season with salt and pepper to taste.
Cover and chill until ready to serve.
