So a friend of mine has a favorite cookie. I’ve never made this cookie or even tried it before so I thought now would be the perfect time to heat up the oven and start baking. The cookie in question is the Snicker Doodle. I searched the internet for Snicker Doodle recipes and found that they are all basically the same…flour, sugar, cream of tartar, butter. And the best part was I already had all the ingredients in my pantry…Bonus!
Snicker Doodle Cookies
2¾ cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
¼ teaspoon salt
1 cup (2 sticks) unsalted butter, at room temperature
1½ cups sugar
1 teaspoon vanilla extract
3 tablespoons sugar
1 tablespoon cinnamon
Preheat oven to 350°F. Line baking sheets with parchment paper.
Mix together the flour, cream of tartar, baking soda and salt in a medium bowl. Set aside.
Cream together the butter and sugar until fluffy. Add the eggs, one at a time, beating well after each. Beat in the vanilla.
Gradually mix the flour mixture into the butter mixture, until well blended.
Chill the dough for at least 30 minutes in the fridge. *Keep dough chilled between batches.*
In the meantime, mix together sugar and cinnamon in a small bowl.
Form 1-inch balls of dough. Roll in the sugar and cinnamon mixture.
Place balls on cookie sheet about 2 inches apart and bake for 10 minutes.
Let cookies set on baking sheet for 2-3 minutes and then remove to cool. Or enjoy them warm with ice cream! Mmmmmm!
