These cheesey potatoes are perfect for a Sunday afternoon…especially during football season.

Cheesey Bacon Oven Chips


  • 3 large potatoes
  • 3/4 cup shredded colby jack cheese
  • 6 teaspoons crumbled bacon (about 6 slices)
  • Chives to garnish
  • Cooking spray
  • Salt & pepper to taste


Preheat oven to 375 degrees.

Chop chives and set aside.

Slice potatoes into 1/8 inch slices.

Bring sliced potatoes to a boil in salted water and cook for 5 minutes. Drain and pat dry.

Grease a baking sheet with cooking spray. Arrange potato slices on cooking sheet. Spray potatoes lightly with cooking spray. Sprinkle with salt and pepper to taste.

Sprinkle with shredded cheese.

Sprinkle with bacon crumbles

Bake 10-12 minutes until cheese is melted.

Chipotle Ranch Dipping Sauce


1 tablespoon ranch dressing
3 tablespoon sour cream
1/4 teaspoon chipotle chili powder
1/8 teaspoon cayenne powder
1/8 teaspoon salt
1/8 teaspoon garlic powder

Place all ingredients in a small bowl and mix throughly. *Note: I didn’t have chipolet chili powder so I just used plain chili powder.*

Garnish potatoes with chives and serve with the dipping sauce. Enjoy!
