Growing up one of my favorite things my mom made was zucchini bread. I loved to eat it right out of the oven with cream cheese spread on the top. Mmmmmm! So when my mom brought me a golden zucchini a few weeks ago I decided to use it to make zucchini bread. And because I didn’t know what else to make using it! Instead of making regular zucchini bread, I made the sweeter version my mom would occasionally make…Chocolate Chocolate Chip Zucchini Bread. Double Mmmmmm!
Chocolate Chocolate Chip Zucchini Bread
- 3 eggs
- 1 cup vegetable oil
- 2 1/2 cups sugar
- 1/3 cup cocoa
- 2 cups shredded zucchini
- 1 tbsp vanilla
- 3 cups flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1 tsp salt
- 1 tbsp cinnamon
- 1 cup chopped pecans
- 1 cup chocolate chips
Peel and shred the zucchini. (Peeling the zucchini is a personal preference only.)
Mix eggs, oil, sugar, and cocoa in a large mixing bowl.
Stir in zucchini and vanilla.
Sift dry ingredients into mixture and stir.
Add pecans and chocolate chips. Do not over stir and do not use an electic mixture.
Pour mixture into two greased and floured loaf pans. Bake at 350 degrees for one hour.
Let cool. Then slice and serve!
